VADA CURRY - SOUTH INDIAN RECIPE
Vada curry is one of famous dish in Chennai. It is
very often serve with idli, dosa and appam. I prefer for chappati also nice
combo. Today i am serving with hot idli
.Let see how to do the recipe.
Ingredient:
For Grind
Chana dal/split chick peas – 1 cup
Red chillies – 2 nos
Garlic – 2 nos
Fennel Seeds – 1tsp
Oil – 1 tsp
Salt – ½ tsp
For Curry
Onion – 2 nos
Tomato – 1 no
G.chilles – 1
Ginger garlic – 1 tsp
Chille powder – 1 ½ tsp
Cinnamon – 1
Cloves – 2 nos
Cardamom - 2
nos
Garam Masala – 1tsp
Curry leaves – few
Coriander- few
Oil - 3 tbsp
Salt – 1 tsp
How to
prepare vada curry
First grind all ingredient mention for grind and steam it for 8 to 10 minutes. Next for
curry, heat kadai with oil then add cinnamon, cloves, cardomom and curry leaves after add garlic ginger paste, then add
onion fry till it becomes transparency, then add tomato fry until it become smashy. Now add masalas one by one turmeric, chille powder, salt, garam masala powder, fry
well till raw smell leave and add water for 2 to 3 cup because chana dal observe the water it became
thick the curry. Meanwhile crush the steamed chana dal keep it ready. When the masala come to boil then add steamed crush chana dal in to curry. It should for
boil for 10 minutes then Vada curry is ready .Garnish with coriander leaves. Serve it with Hot idlis.
Step one by one
Soak for 1/2 hour
Grind all above mention ingredient
Steam the grinded dal for 8 mintues
take all ingredient for curry
Heat oil in kadai add whole garam masala and ginger garlic paste
Add onion, g. chilles and curry leaves fry well
Add masalas one by one
Fry well till raw smell of masala have gone
Crush the steamed chana dal for curry
Add water when it come to boil add crushed chana dal
Vada curry should boil for 10 minutes
Now vada curry is ready & Garnish with corinder leaves
Serve it with Idli
